During the holidays, we’re prone to overindulging, don’t fight it, just make sure you’re balancing out with nutritious, fortifying meals. This complete protein, clean meal brings this rice and beans recipe into a new territory of yum.
For four servings:
1 cup brown rice
1 cup dry beans (according to this article soaking is pasé these days.)
2tbls ghee or 2tbls olive oil OR 2tbls coconut oil (depending on your flavor pref)
SPICES! This is what I use, to taste:
– onion powder
– garlic powder
– turmeric
– curry
– garam masala
– high quality salt (not table salt)
Start with 1 teaspoon of each spice (save salt til last and add your preferred amount) As you know, I’m all about freestylin’ dishes, so I encourage you to find the amounts and types of spices that best suit your taste…experiment, have fun!!!
Cook rice and beans separately as directed. Blend together in a big metal bowl so you can easily stir in all the spices and oil. Add in your oil or ghee, spices, and stir! Add in ¼ cup chopped cilantro for added nutrition and detoxifying qualities. I also added some chopped avocado to this bowl for a little extra healthy fat.
